During the reporting period, cheddar cheese prices decreased significantly at 
the low end of the price range while exhibiting only a slight increase on the 
high end. The end of the Oceania production season signals reduced output in 
the near term, and inventories are tight as a result. Domestic demand is steady 
to lighter while export demand remains strong. At GDT event 381, the price of 
the July contract increased slightly while prices fell for all other contracts 
periods where product was traded. A 4.2 percent decline in the cheddar price 
index suggests greater sales of lower-priced cheese for delivery in the latter 
half of the year. Cheddar cheese sales volumes were substantially higher at GDT 
event 381 compared to event 380, but only slightly higher than the same time a 
year ago.

Dairy Australia recently released export data for Australia showing cheddar 
cheese export volumes from July 2024 - March 2025 were 24,027 MT, up 29.6 
percent from the same time period a year earlier. Other cheese export volumes 
from July 2024 - March 2025 were 105,095 MT, 17.7 percent higher compared to 
the same time frame a year prior.

During GDT event 381, on June 3, 2025, the average price for cheddar across all 
contracts periods was $4,759, corresponding to a 4.2 percent decline in the 
cheddar price index from the prior event. The average price for the July 
contract was $5,221, with the July price index up 2.0 percent.
