Milk volumes remain healthy as the region begins its seasonal transition to 
cooler weather. Fluid supplies are sufficient for current draws and all 
contractual obligations. With the holiday weekend, spot trading was less 
efficient. Ultrafiltration (UF) pulls remain strong. Class I demand is steady 
to firm as school bottling ramps up across major metro areas, with New York 
City schools opening this week. Class II continues seasonal draws. Packaged ice 
cream output is slowing, while yogurt production remains strong to meet ongoing 
demand. Cream cheese demand should increase soon, in line with holiday baking. 
Class III cheese operations are consistent, supported by steady milk 
availability across much of the region. Class IV butter churns are operating to 
fulfill the beginning of seasonal draws, and contacts note private-label 
production has increased to six days per week.Contract prices on cream 
retracted somewhat this week. Only a few spot purchases occurred, with the 
holiday contributing to reduced spot activity. Cream multiples declined to 
reflect market activity, and more so on the front end of the week. Condensed 
skim demand is elevated amid tight spot availability. As UF continues to pull 
Class I for processing, less condensed skim milk is available for processing, 
with the exception of contract fulfillments. This continued shortage moved the 
lower end of the price range higher, with a more modest decline in the long 
end. Overall, the market tone is steady.
