Prices for dry buttermilk are holding steady in the Central and East regions 
this week. Demand for dry buttermilk is soft, and some contacts say they expect 
spot trading to remain light until fall. Spot loads of dry buttermilk are 
tight, and some manufacturers say they are working to rebuild warehouse 
inventories to meet anticipated demand during the Q4 baking season. Ice cream 
makers continue to purchase significant volumes of condensed buttermilk, 
reducing availability for drying operations. Manufacturers are running steady, 
but somewhat limited, dry buttermilk production schedules. Some plant managers 
note they are primarily focusing their dry buttermilk production on fulfilling 
contractual obligations.
