In the Central region, milk output ranges from steady to lighter. Contacts in 
the upper Midwest say cool temperatures are keeping milk components high 
week-to-week, leaving plenty of cream available. As summer continues to near, 
ice cream makers are drawing on available cream supplies. Cream volumes are 
available for churning, though some plant managers say they have scheduled down 
time during the upcoming holiday weekend, reducing spot cream demand. Ahead of 
the holiday weekend, butter churns are active, as processors are working to 
build inventories for use later in the year. Some plant managers say they are 
increasing 82% fat butter production amid increasing export demand. Domestic 
demand for butter is steady, and spot loads are available for purchasing.
