Milk output is steady in the Central region and component levels are strong. 
Contacts report both milk production and components are up from last year. 
Processors throughout the region scheduled downtime this week for Thanksgiving, 
contributing to lighter demand for all Classes. Stakeholders say spot sales to 
bottling operations are significantly less than last week, though some expect 
interest to rebound following the holiday. Cheesemakers say spot demand for 
Class III milk is light, as plant managers are utilizing internal volumes to 
run busy schedules to prepare for the late-week holiday. Class III spot prices 
are unchanged from last week, ranging from $1.5-under to $1.5-over Class. Cream 
remains plentiful in the region and butter makers report lower multiples than 
last week, showing significant declines due to the Thanksgiving holiday. Butter 
production is lighter this week as several processors are not purchasing 
additional spot cream as they prepare for downtime.
