Fluid Milk and Cream - Central U.S.

In the Central region, milk output varies, but higher temperatures are starting 
to have an impact in more parts of the region. In the Southwest, milk 
production continues to decline due to the June heat. Meanwhile in the Midwest 
contacts say milk output is generally steady, though some note volumes are down 
slightly from last week. Similar trends are present with milk components 
throughout the region, though contacts say they remain higher than in previous 
years. Cream is available in the Central region and contacts say ice cream 
makers are scooping up greater volumes to meet their summer production needs. 
Butter makers continue to use available cream volume to run busy production 
schedules. Demand for Class I milk continues to decline as many educational 
institutions are on break for the summer. This is leaving more milk available 
for Class III processors. This increased availability contributed to lower spot 
Class III prices this week. Cheesemakers say they are utilizing available 
volumes of Class III milk to run busy production schedules.
