Demand for cream is equally strong, with Class II and III demand increasing for the upcoming spring holiday. Many butter makers are using contracted loads to meet busy production schedules, but some butter makers are buying spot loads of cream to keep churns full. Cream multiples for Class IV use are on the rise. Retail and food service demand for butter are strong and contacts anticipate continued strong demand for the next few weeks.
