Butter - Central U.S.

Released on June 18, 2025

Cream output is declining in the Central region, as warmer temperatures are
having a negative impact on milk components. Contacts say milk components are
down week-to-week, but fat content is up from a year ago, leaving plenty of
cream available. Ice cream makers continue to pull on available cream supplies
and butter makers are actively churning as they work to stock butter for use
later in the year. Butter is available for spot purchasing. Domestic butter
demand is steady to lighter. High prices for butter produced internationally
are contributing to strong export interest. Some plant managers say they are
increasing their 82 percent butterfat production to meet this export demand,
reducing 80 percent output.
