Milk output is steady in the Central region, contributing to strong cream 
production. Class II and Class III processors are buying significant volumes of 
cream. Contacts say this is keeping spot cream volumes balanced to somewhat 
snug. Spot cream demand is light from butter makers, as they are primarily 
using cream from contracts and within their network to keep churns active. 
Butter makers are running busy production schedules. Spot loads of butter are 
available. Domestic demand for butter is steady week to week, but some 
stakeholders report lighter food service demand than expected this time of 
year. Export butter demand is unchanged.
