Fluid Milk and Cream - Central U.S.

Released on December 18, 2025

Farm level milk output is up year over year in the Central region. In the
Southwest, milk production is steady, but contacts in the Midwest say winter
weather is negatively impacting output. Demand is softening for all Classes of
milk. Contacts report educational institutions are closed for winter break,
contributing to the decline in demand from Class I processors, but anticipate
interest to pick up in early January. Cheesemakers say this is adding more milk
to the spot market and some are offering additional volumes at lower prices
ahead of planned downtime for the holidays. Class III milk prices are lower
this week, ranging from $6-under to $1-over, and some contacts suggest prices
may decline further in the coming weeks. Cream production is strong in the
Central region. Cream multiples are lower this week. Scheduled downtime around
the upcoming holidays is contributing to lighter demand for cream. Butter
makers say they are not purchasing significant volumes of cream currently, as
they are primarily using cream internally or selling volumes to prepare for the
holidays.
