In the Central region, milk production is steady though contacts say output is 
up from one year. Class I demand is strong, and some contacts say they are 
moving more loads to bottling operations than they typically would this time of 
year. Demand from Class II processors is steady to higher. Spot sales of Class 
III milk remain light. Contacts say they are primarily moving volumes of milk 
from cheese plants to bottling, due to strong demand. Some cheesemakers say 
they are not actively buying spot volumes of milk, as they have sufficient 
volumes within their network to run steady production schedules. A few plant 
managers say they are selling spot volumes of Class III milk, due to downtime, 
to nearby cheesemakers at prices ranging from $2-under to $1.5-over Class. 
Contacts report milk component levels are up from last year, contributing to 
strong cream production. Class II cream demand continues to strengthen, though 
interest from butter makers is steady. Butter churns are active, and some 
butter makers say they are using more cream internally, rather than selling 
spot volumes.
