In the Central region, milk output is steady, but contacts say volumes remain 
up from a year ago. Class I demand is strong and some manufacturers in the 
region say they are moving volumes to other regions to help meet bottling 
demands. Demand from Class II plants is picking up. Cheesemakers are running 
steady to lighter schedules, and some say they are selling spot loads of milk 
to other cheesemakers nearby, while others are moving volumes to Class I 
production. Spot demand for Class III milk remains light as cheesemakers in the 
region say they are utilizing volumes from within their network, rather than 
purchasing spot loads. Prices for Class III milk are down from last week, 
ranging from $0.25-under to $2.00-over. Milk components are increasing in the 
region, contributing to strong cream production. Cream is available in the 
region. Demand for cream from butter makers is softer this week, as some plants 
have downtime for maintenance. Class II cream demand is increasing though, 
which some contacts say is contributing to higher cream multiples this
