Fluid Milk and Cream - Central U.S.

Released on May 22, 2025

In the upper Midwest, milk output is strong, though stakeholders say production
is declining in the Southwest portion of the region. Some contacts in the
northern reaches of the Central region say cool weather is keeping cows
comfortable and contributing to strong milk components. In other portions of
the region, milk components are reportedly declining due to warmer weather.
Despite this decline, contacts report cream volumes are plentiful in the
Central region. Ice cream makers continue to increase their cream purchasing.
Butter makers are also heavily utilizing cream to build inventories ahead to
freeze for use in the fall. Some butter makers say they have planned downtime
for the holiday weekend, increasing spot cream availability. Class I milk
producers are increasingly moving from bottling operations toward other Classes
as summer break begins in different parts of the region. Plenty of Class III
milk is available ahead of the long weekend and contacts report spot milk
prices ranging from $7-under to $1.5-under. In Week 21 of last year, Class III
cream prices were $6-under to $0.50. Some plant managers in the region say they
are full on milk and not taking in additional loads this week. Some butter
makers are selling are selling spot volumes of cream to prepare for the holiday.
