AMS_1100 MARS Fluid Milk and Cream - Central U.S. Released on January 08, 2026 In the Central region, farm level milk output is strong, and contacts say milk is plentiful. Processors of all milk Classes say they are running busier schedules this week, after having some scheduled time off for the end of year holidays. Educational institutions started returning from winter break this week and bottling operations are pulling in additional spot milk to fulfill their needs. Class III spot milk prices range from $5-under to $1-under Class. The bottom of the Class III price range moved higher, amid busier production schedules this week. Cheesemakers are primarily utilizing milk from within their network and are not actively purchasing spot volumes, which they say is contributing to lower prices at the top of the range. Cream production remains strong in the Central region and spot loads are available. Churns are more active this week, but cream demand remains light as butter makers are using internal cream volumes to run busy production schedules. Some butter makers are securing cream at lower multiples this week from nearby processors who are offering loads at low prices due to unplanned downtime. Higher cream multiples were reported for Class II and at the top of the all Classes range, amid strong demand from Class II and Class III processors.
