Milk output is strong in the Central region and contacts say farm level 
production is up from a year ago. The New Year's holiday this week negatively 
impacted demand for all Classes of milk. Class I demand was light early in the 
week, but interest in spot loads following the holiday is strong. Some plant 
managers say they are operating busy schedules at the end of the week and into 
the weekend, as they prepare for the end of winter break for educational 
institutions in the region. Downtime at plants throughout the region left ample 
volumes of spot milk available. Some cheesemakers say they were offering Class 
III milk to move volumes ahead of planned downtime this week and were offering 
hefty discounts to encourage potential purchasers. Reported prices for Class 
III milk were down from last week and ranged from $9.50-under to flat Class. 
Cream multiples moved lower this week. Milk components remain strong, and cream 
is plentiful in the region. Contacts report sales to Class II and III 
processors are limited, and interest from butter makers is light. Butter 
production is strong, though some downtime was scheduled for the New Year's 
holiday this week. Due to this, some plant managers say they are not purchasing 
spot cream, as they are primarily using volumes from within their network.
